What Is Khejur Gud?

Khejur Gud is made from the sap of date palm trees, tapped at dawn during the coldest months of the year. The sap is then slow-cooked into a thick, rich jaggery that carries a unique, smoky-caramel flavor. It’s a key ingredient in classic Bengali sweets like pithe, payesh, and sandesh, and a nostalgic winter must-have.
